Peanut Butter Breakfast Collagen Bars

INGREDIENTS:

  • 1 1/2 cups quick-cooking oats
  • 1/2 cup almond flour or meal
  • 1/2 cup flaxseed meal
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon fine sea salt
  • 2 scoops PURE collagen powder (unflavored)
  • 1 teaspoon pure vanilla extract
  • 1 large overripe banana (mashed)
  • 1/2 cup unsweetened applesauce
  • 1/3 cup creamy peanut butter
  • 2 tablespoons maple syrup or honey
  • Topping: 1/3 cup (or more 😉) creamy peanut butter

DIRECTIONS:

  1. Preheat your oven to 350°F and line an 8×8 square baking dish with parchment paper (or grease it up really well).
  2. In a small bowl, combine all the dry ingredients (oats, almond flour, flaxseed meal, cinnamon, sea salt, and PURE collagen). Set aside.
  3. In a large bowl, mash the banana until smooth. Stir in the vanilla, applesauce, peanut butter, and maple syrup (or honey) until well combined.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined. The mixture should be moist but not soupy.
  5. Spread the mixture evenly into your prepared pan.
  6. Bake for 20 minutes, until the edges are slightly browned and the top is set.
  7. Remove from the oven and immediately spread the extra creamy peanut butter over the top of the bars (don’t be shy—add more if you want!).
  8. Pop the bars back into the oven for another 5 minutes, or until the peanut butter is bubbly and the edges are lightly browned.
  9. Cool completely in the refrigerator before cutting into 8 large or 16 small bars. Store in an airtight container in the fridge for up to 5 days or individually wrap and freeze for up to 2 months.
