Peanut Butter Breakfast Collagen Bars
INGREDIENTS:
- 1 1/2 cups quick-cooking oats
- 1/2 cup almond flour or meal
- 1/2 cup flaxseed meal
- 2 teaspoons ground cinnamon
- 1/2 teaspoon fine sea salt
- 2 scoops PURE collagen powder (unflavored)
- 1 teaspoon pure vanilla extract
- 1 large overripe banana (mashed)
- 1/2 cup unsweetened applesauce
- 1/3 cup creamy peanut butter
- 2 tablespoons maple syrup or honey
- Topping: 1/3 cup (or more 😉) creamy peanut butter
DIRECTIONS:
- Preheat your oven to 350°F and line an 8×8 square baking dish with parchment paper (or grease it up really well).
- In a small bowl, combine all the dry ingredients (oats, almond flour, flaxseed meal, cinnamon, sea salt, and PURE collagen). Set aside.
- In a large bowl, mash the banana until smooth. Stir in the vanilla, applesauce, peanut butter, and maple syrup (or honey) until well combined.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined. The mixture should be moist but not soupy.
- Spread the mixture evenly into your prepared pan.
- Bake for 20 minutes, until the edges are slightly browned and the top is set.
- Remove from the oven and immediately spread the extra creamy peanut butter over the top of the bars (don’t be shy—add more if you want!).
- Pop the bars back into the oven for another 5 minutes, or until the peanut butter is bubbly and the edges are lightly browned.
- Cool completely in the refrigerator before cutting into 8 large or 16 small bars. Store in an airtight container in the fridge for up to 5 days or individually wrap and freeze for up to 2 months.
