Powered Up Protein Muffins
INGREDIENTS:
- 1 3/4 cups blanched almond flour
- 1/4 cup *ALL Protein unflavored (~40 grams)
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 3 large bananas (approximately 1 heaping cup)
- 1 large egg - @ room temperature
- 1/4 cup sugar free maple syrup (can sub for honey)
- 1 teaspoon vanilla extract
- optional - 1/2 cup dark chocolate chips
- optional - flaked almonds
TOOLS:
- 1 large mixing bowl
- 1 medium mixing bowl OR blender
- 12-ct muffin tin
- Muffin liners
- SERVING: 12 muffins
NOTES:
*If you don’t have unflavored whey, you can try using vanilla flavored (Or click the BUY IT NOW button.) Otherwise sub the 1/4 cup of whey for an additional 1/4 cup of almond flour.
DIRECTIONS
- Preheat the oven to 180C/350F. Line a 12-count muffin tin with muffin liners and lightly spray with coconut oil or olive oil. Set aside.
- In a large mixing bowl, add your dry ingredients and mix well. Optional - In a high speed blender, add the wet ingredients: bananas, egg, maple syrup, and vanilla extract, and blend until smooth. Otherwise, grab your medium mixing bowl and just mash your bananas really well; making sure to combine the wet ingredients really well.
- Add the wet ingredients to the dry ingredients. Fold through the chocolate chips if using. Distribute the batter into the muffin liners and top with flaked almonds. Bake the muffins for 17-20 minutes or until golden on top and a skewer comes out clean. This time will vary, so use a toothpick and when it comes out clean, it’s ready!
- Let the muffins cool in the pan for 10 minutes and then enjoy :)
